This Holiday Ham and Cherry Sauce recipe is not only easy and quick to prepare, but healthy as well.
In this recipe you will need: 5 pounds of fully cooked boneless ham, one-whole cloves, cherry sauce and parsley sprigs. For the cherry sauce, you will need: 2 cans (16-ounces each) red tart pitted cherries in juice, undrained; 2/3 up to 3/4 can of unsweetened pineapple juice; and 4 teaspoons lemon juice. In addition, have a 1/4 cup cornstarch; 7 1/4 to 10 3/4 teaspoons of Equal for Recipes or 24 to 36 packets; 1 up to 1 1/2 cups Equal Spoonful of sweetener; and red food colouring, which is optional.
To prepare, place the ham in a roasting pan and sick cloves in it. Roast the ham at 325 Fahrenheit (160 degrees Celsius) until a thermometer placed in the centre of ham displays 160 Fahrenheit (70 degrees Celsius), approximately 1-1/2 hours.
Slice the ham and set up on serving dish together with bowl of cherry sauce in the middle. Decorate with parsley. It will make up to 16 servings.
To prepare the cherry sauce, follow these steps. First, drain cherries and set aside the juice in a 2-cup glass measure; add a sufficient amount of pineapple juice to have 2 cups. Second, pour lemon juice and juice mixture into a medium saucepan and whisk it into the cornstarch until smooth. Let it boil, while whisking continuously; boil until thickened, whisking continuously, around 1 minute.
ut cherries into the saucepan and cook thoroughly on medium heat until hot all over, 3 to 4 minutes. Mix in Equal and food colouring. It will make about 4 2/3 cups of sauce.
